CHILCOSTLE


Bright deep orange-red with a splotchy skin. Elongated and tapered, measuring about 3 to 5 inches long and 1/2 to 3/4 inch across at the shoulders. Thin fleshed, with a dusty, dry medium heat and an orangey sweetness with hints of allspice and fennel. Used in salsas, soups, tamales, and mole sauces.
