Related to the chilhuacle negro and chilhuacle rojo chiles. Grown onlyin the south of Mexico. Dark amber to reddish yellow in color, broad shoulderedand tapering to a point. Measures about 2 to 3 inches long and l I/2 inchesacross at the shoulders. Medium thick fleshed, with a tart heat. The complexflavor is a little salty and acidic, with bitter orange and sour cherrytones, some melon and seediness, and sweetness in the finish. Mainly usedto prepare yellow moles and other sauces.
