The peeled, dried, roasted form of the fresh New Mexico green chile,also referred to as the dried California chile. Medium olive to dark greenin color, flat and tapered, long and I inch across. Very thin fleshed; hasa sweet, light, smoky flavor with hints of citrus and dried apple, and tonesof herbs and celery. It is used in powdered form to season beef jerky. Alsoused in soups and stews.
