PICO DE PAJARO


Literally "bird's beak," due to the resemblance in shape. Closely
related to the chile de arbol. Deep orange-red, tapering to a point, andmeasuring about I inch long and 1/4 inch across. Thin fleshed, with fruityplum tones. Commonly used in salsas, sauces, marinades, and pickled (enescabeche).
