Although it is usually seen in its yellow dried form (see aji mirasol in the dried chile section), the aji can also be found in its green or red state. It tapers to a point, and measures about 3 to 5 inches long and 3/4 inchin diameter. Thin fleshed; has a tropical fruit flavor and a searing, clearheat. Used in ceviches, salsas, and sauces, and pickled (en escabeche).
