Also known as the California or long green chile, and closely related to the New Mexico chile. Pale to medium bright green, tapered, and measuring about 6 inches long and 2 to 2 1/2 inches in diameter Medium to thick fleshed; has a green vegetable flavor that is improved by roasting. Originally grown around Anaheim in Southern California at the turn of the twentieth century. Now available year-round in California and the Southwest, and in Latin markets elsewhere. Excellent stuffed (rellenos). Also used in stews and sauces, and as rajas.
