ANAHEIM GREEN


Also known as the California or long green chile, and closely relatedto the New Mexico chile. Pale to medium bright green, tapered, and measuringabout 6 inches long and 2 to 2 1/2 inches in diameter Medium to thick fleshed;has a green vegetable flavor that is improved by roasting. Originally grownaround Anaheim in Southern California at the turn of the twentieth century.Now available year-round in California and the Southwest, and in Latin marketselsewhere. Excellent stuffed (rellenos). Also used in stews and sauces,and as rajas.
