Bright medium green, shaped like a cube but rounded at the edges, sometimestapering slightly from broad shoulders. Measures about 4 to 5 inches longand about 3 to 4 inches in diameter. Thick fleshed; has a sweet, mild, greenvegetable flavor. Never substitute bell peppers for chiles such as Anaheimsor New Mexico greens or reds in Southwestern or Latin American dishes, asthe flavors are not complementary to the spices used. Bell peppers alsooccur in a variety of other colors. Used in salads, casseroles, and in vegetabledishes. Can be stuffed, roasted, or grilled.
