Bright medium green, shaped like a cube but rounded at the edges, sometimes tapering slightly from broad shoulders. Measures about 4 to 5 inches long and about 3 to 4 inches in diameter. Thick fleshed; has a sweet, mild, green vegetable flavor. Never substitute bell peppers for chiles such as Anaheims or New Mexico greens or reds in Southwestern or Latin American dishes, as the flavors are not complementary to the spices used. Bell peppers also occur in a variety of other colors. Used in salads, casseroles, and in vegetable dishes. Can be stuffed, roasted, or grilled.
