CHILACA


Dark brown or chocolate colored, elongated, and often curving in shape. Measures about 6 to 9 inches long and I inch in diameter. Most often used in its dried form, when it is referred to as a chile pasilla or chile negro. Very rarely found fresh in North America. Sometimes pickled (en escabeche) or added to sauces.

Where: Guanajuato, Jalisco, and Zacatacas (central Mexico)
