GUERO


Guero is a generic term for yellow chiles, the name coming from the Spanish,meaning light skinned or blond. It usually applies to pale yellow taperedchiles such as the Hungarian wax or banana chiles, or the Santa Fe grande.Size varies from about 3 to 5 inches long and 1 to 1 l/2 inches in diameter.Medium fleshed, slightly sweet, with a sharp and intense waxy taste. Variesin strength from medium to hot. Primarily used to make yellow mole sauces.Can also be used in other sauces or in salads, or pickled (en escabeche).
