HUACHINANGO


Region-specific name in central Mexico, Puebla, and Oaxaca for a typeof large red jalapeno. Commonly found with white veins on the skin, tapersto a rounded end and measures about 4 to 5 inches long and about 1 1/2 inchesin diameter. Thick fleshed; sweet, with a medium-hot intensity. They arehighly prized for their sweetness and thick flesh, and cost three to fourtimes as much as common jalapenos. Huachinango chiles are smoked and driedto make chipotle grande chiles (see Chipotle a dried chile) Fresh huachinangochiles are commonly used in salsas, stews and sauces.
