MACHO GREEN


Related to the pequin. Light to medium green, and measuring about 1/2 inch or less. Use sparingly-this is a small but mighty chile, as you might guess by its name. It is fiery hot, with a very sharp, intense flavor, and green tones. Mainly used in salsas. Can also be used in stews add the whole chiles and remove them before serving.
