TABASCO
Bright orange-red, measuring about 1 to 1 1/2 inches long and 1/4 to
l/2 inches in diameter. Thin fleshed; a sharp, biting heat, with some stemminess
and hints of celery and green onion. Used almost exclusively in the famous
McIlhenny Tabasco pepper sauce.
