Bright medium green to red when ripe. Thin, elongated, and pointed; measures about 1 I/2 inches long and 1/4 inch in diameter. Meaty textured and thin fleshed with copious seeds and a lingering heat. Primarily used in Southeast Asian cooking. Red Thais are sometimes used decoratively in salads and noodle dishes. Fresh serrano chiles can be substituted in the ratio of three serranos to one Thai.
