The Mclntosh is a very juicy, tender-fleshed variety. It is grown in
most apple-growing areas. Unlike the Red and Golden Delicious, which are
at their best when grown in the Northwest, the best Macs are produced in
the Midwest and Northeast. The Mac is fine for eating out of hand, but it
is not one of our better cooking or baking apples. Applesauce made from
Macs almost has the texture of baby food. They cook up too soft to use in
pies because the slices dissolve, and when baked whole in the oven they
melt and collapse.
