This large, round, red-skinned variety is our top-selling baking apple.
Despite its nice size and firm texture, it lacks flavor when eaten out of
hand. However, the addition of sugar and spices sparks up the bland flavor
when the Rome is baked whole in the oven. One reason the Rome is so popular
for this use is that it holds its shape when baked. The trick to having
perfectly baked Romes is to allow them at least an additional ten minutes
in the oven after you believe they are done. The Rome can take a lot of
heat.
