The casaba, a white-fleshed melon, is my candidate for our poorest flavored melon. When fully ripe, it is juicy but has a squash like flavor. More often than not, they just aren't ripe. They arrive in August and are available until the end of December. They have a light green skin color when not quite mature and this color changes to a pale yellow as the melon ripens. They can be identified by their flatness at the blossom end and the scored wrinkles in the skin at the stem end. Casabas will gain color and soften if left at room temperature, but they will not get any sweeter.
