The Juan Canary (Canari) looks just like a lemon-colored honeydew. It
has a white flesh and at best is sweet and juicy. But it is difficult to
find one that is at its best. They are either too firm or too soft and seem
to go from one extreme to the other in a matter of hours. Since they are
in season from July to November, the same period that the top three varieties
(canteloupe, crenshaw & honeydew) are at peak of season, its easy to
skip the Juan Canaries.
