The Juan Canary (Canari) looks just like a lemon-colored honeydew. Ithas a white flesh and at best is sweet and juicy. But it is difficult tofind one that is at its best. They are either too firm or too soft and seemto go from one extreme to the other in a matter of hours. Since they arein season from July to November, the same period that the top three varieties(canteloupe, crenshaw & honeydew) are at peak of season, its easy toskip the Juan Canaries.
