The Persian melon is superb when it is vine-ripened. It is a large round melon that has a deep orange flesh and a sweet, musky flavor. The skin is heavily netted, and when vine-ripe, the color peeking through the netting is orange. However, in nearly all the Persians that come to market, that color peeking through the webbing is green, signifying that the melons were picked prior to reaching maturity. While vine-ripened Persians are available in California, in New York Hunts Point Market, the world's largest wholesale produce terminal, ripe Persians are extremely rare. Persians are usually available in August and September.
