PERSIAN MELON


The Persian melon is superb when it is vine-ripened. It is a large roundmelon that has a deep orange flesh and a sweet, musky flavor. The skin isheavily netted, and when vine-ripe, the color peeking through the nettingis orange. However, in nearly all the Persians that come to market, thatcolor peeking through the webbing is green, signifying that the melons werepicked prior to reaching maturity. While vine-ripened Persians are availablein California, in New York Hunts Point Market, the world's largest wholesaleproduce terminal, ripe Persians are extremely rare. Persians are usuallyavailable in August and September.
