Chanterelle A.K.A.: Girolle
Flavor and Texture: fruity odor with a mild apricot and spice flavor, firm
and thick
Description: cap is egg-yellow to orange in color, 1-6 inches wide and slightly
convex, to trumpet-shaped to nearly flat. Forked, deeply grooved gills stretch
from the under cap surface onto the stem. Note: good in light sauces with
poultry, game, eggs, rice, pasta and stuffing.
