Crimini A.K.A.: Romans, Brown
Flavor and Texture: light and slightly woodsy flavor: meaty, dense texture.
Description: dark brown exterior cap with a beige interior. Notes: thisis a good all-purpose mushroom, but a little meatier and more interestingthan the normal cultivated button mushroom. The crimini is a young portabella.It belongs to a special class of mushrooms that have tubes instead of gillsunder their caps: the tubes are imbedded in a spongy layer.
