Note: the delicate stature of the enoki lends itself beautifully as a raw
garnish. It has been used traditionally in Japanese clear
soups, but is beginning to show its versatility in other kinds of
food preparations, such as salads, sandwiches and stir-fry. It is
marketed fresh, dried or canned.
