ENOKI

Enoki, Volvariella volvacea A.K.A.: Enokitake, Straw Mushroom,Velvet Stem, Golden Mushroom
Flavor and Texture: slightly acidic and fruity flavor.
Description: wispy and slender with tiny white caps.
Note: the delicate stature of the enoki lends itself beautifully as a rawgarnish. It has been used traditionally in Japanese clear
soups, but is beginning to show its versatility in other kinds of
food preparations, such as salads, sandwiches and stir-fry. It is
marketed fresh, dried or canned.
