HEDGEHOG

Hedgehog, Hericium erinaceus
A.K.A.: Bearded Tooth, Pied de Mouton or "sheep's foot"
Flavor and Texture: mild peppery flavor; firm, dense texture with delicate"teeth" covering the whole outer surface.
Description: creamy-white to golden-yellow in color, growing 1-2 1/2 incheswide with no stem. It may be a bit funneled and folding in on itself. Thesoft and edible tendril-like spines may extend up to 1 inch in length offthe outer surface of the mushroom. Note: excellent in soups and stews.
