Lobster Mushroom, Hypomyces lactiflucorum
Flavor and Texture: extremely mild and delicate flavor that is almost indiscernible;
slightly crunchy, dense texture.
Description: bright orange to reddish-orange color with numerous small bumps
embedded in its surface (like sandpaper). Note: the lobster mushroom grows
wild in the Northwestern region of the United States and is cultivated there,
too. It is used mostly for its intense color appeal and ability to blend
well with other flavors.
