Matsutake, Tricholoma matsutake
Flavor and Texture: very fragrant and earthy, slight pine flavor: thick,
firm flesh.
Description: reddish-brown caps are 2-10 inches across and convex to nearly
flat. The meat is snow white. At a young stage of development, the caps
are cottony and tend to roll under on themselves. As the mushroom matures,
it becomes scaly and sticky. Note: matsutakes are an ancient Japanese delicacy.
There is a romantic tradition of mushroom hunts and picnics in the pine
forests where the matsutake grows, and this is a favorite theme in Japanese
art work and poems.
