Flavor and Texture: Rich meaty flavor and chewy texture

At this point, however, the mushroom begins its natural senescence. The
gills on a large portobella tend to be flaky or even jelly-like and are
frequently removed before culinary use to avoid tainting the food they contact.
Note: the portobella and the crimini are one and the same mushroom at two
different stages of development. The flavor of the mushroom is usually compromised
when it is allowed to grow to portobella size, however. Still, the portobella
will absorb marinating flavors beautifully and will hold up especially well
for grilling or stuffing.
