Flavor and Texture: less aromatic than the other kind of truffle but somewhat
nutty in flavor; warted texture with marbled beige white flesh.
Description: smaller and lighter in color as compared with the
black truffle.
Note: these truffles were once a big trade in England, but the market for
them has trailed off for the preferred French and Italian varieties. The
last record of professional truffle-hunting in England relates to Mr. Alfred
Collins. who met with some success, aided by the sniffing prowess of his
two dogs in the woods near his home in Winterslow in Wiltshire. After a
full day of profitable foraging, he pampered his dogs by carrying them home
in hand-crafted leather baskets affixed to his bicycle.
