White truffle A K A: Piedmont truffle, Italian truffle
Flavor and Texture: the aroma tends to be stronger than black truffles,
but the flavor is milder and slightly peppery.
Description: beige to creamy-gray color with similarly warted skin texture,
size and knobby shape as the black truffle. Note: in Italy, these truffles
are classically served as shavings or they're grated over pasta or risotto.
They are in season October through November in the Piedmont region of northern
Italy.
