ALMONDS
·It's no accident that the almond is a significant player in many world
cuisines. Because it stores well, the almond often traveled with nomads
in their search for new lands. Although the nut was first cultivated in
the Nile Valley, California now produces two thirds of the world's supply
·A versatile nut, the almond enhances foods' flavors without overpowering
them. Roasted and chopped, these nuts are delicious stirred into cooked
Ace, couscous, other grains, and yogurt, or sprinkled over cooked fruit,
vegetables, and salads. And, of course, they're great for baking.
·Almonds are a little leaner than most nuts, with 167 calories and
15 grams fat per ounce 81 percent of calories from fat.
