PECANS
·Southerners may lay claim to pecan pralines and pies, but these delicious
nuts thrive in the sandy soils of New Mexico and Arizona. Just south of
Mesilla, New Mexico, the world's second largest pecan orchard sprawls over
3,600 acres. If you're traveling on State Highway 28, you'll pass under
a 3-mile canopy of pecan tree branches as you cut through the orchard.
· Pecans are wonderful in waffles and pancakes, stirred into turkey
dressings just before serving, and in all manner of baked goods.
·Pecans contain 187 calories and 18 grams fat per ounce-87 percent
of calories from fat.
