BARLEY


One of the earliest grains cultivatied, it can grow in areas where wheatcannot. Extremely nutritious, but chiefly eaten pearled, or polished, withthe hull removed, in soups; also available whole and unhulled, flaked, ingrits, flour,or made into malt (sweet syrup).
