TRITICALE


A combination of rye and wheat that has a superior balance of amino acidsand constitutes a nearly complete protien, it is geneticaally unstable compoundin nature. However, scientists have been able to breed it successfully inthe laboratory, making it the first humanly engingeered grain. It thrivesin poor soil; the flavor is milder than rye, stronger than wheat. It isavailable as whole grain berries or groats, or as flour.
