ARUGULA


Arugula, also called rocket salad in some areas, can best be describedas an Italian watercress and looks somewhat like the greens of radishes.It has a sharp, pungent, peppery, tangy flavor. Arugula used to be foundonly in Italian neighborhoods and was available from late spring throughearly fall. It is now rapidly gaining favor and is available year-roundin most of the larger retail markets. Since it is fairly perishable, purchaseit only if it looks very fresh. Wrap it well and keep it refrigerated. Useit sparingly because it can easily overpower the other ingredients in thesalad. Like most Italian favorites, arugula goes well with fresh tomatoes.
