Arugula, also called rocket salad in some areas, can best be described as an Italian watercress and looks somewhat like the greens of radishes. It has a sharp, pungent, peppery, tangy flavor. Arugula used to be found only in Italian neighborhoods and was available from late spring through early fall. It is now rapidly gaining favor and is available year-round in most of the larger retail markets. Since it is fairly perishable, purchase it only if it looks very fresh. Wrap it well and keep it refrigerated. Use it sparingly because it can easily overpower the other ingredients in the salad. Like most Italian favorites, arugula goes well with fresh tomatoes.
