Borage, called sandpaper in the produce trade because of its hairy green
leaf, is a seldom used salad item and probably isn't offered for sale in
your local market unless you live in an Italian neighborhood. Because it
is quite aromatic, it is used to flavor salads and other cooked vegetables.
In some parts of Europe borage is brewed as an herbal tea, added to season
soups and is used for medicinal purposes.
