Curly endive (curly chicory on the East Coast) is loosely headed withcurly, ragged-edged leaves. The heart of the head is yellow and the outerleaves are green. It is usually used as a salad green, but in Europe itis used primarily as a cooked vegetable and in making soups. It is verycrisp when fresh and has a rather bitter flavor. Curly endive usually sellsat moderate prices. It is fairly perishable and should always be refrigerated.Another one of those additions to the new popular salad greens mixes.
