The dandelion you eat is the same plant that is a nuisance when it shows up on your lawn. In Europe wild dandelion that grows in the fields and along the roads is gathered and used as a salad green. In the United States it is cultivated on a limited scale. It is not a big seller because most people object to its very bitter flavor. It is usually used as a raw salad green but can also be served as a cooked vegetable. Another one of those additions to the new popular salad greens mixes.
