Savoy cabbage's crinkly, flexible green leaves grow in a loosely packed head. More tender than green cabbage and milder in flavor, Savoy may be used intrchangeably with green and red cabbage. Salad Savoy's frilly leaves have the heavy texture of kale in variegated colors of white, green, and red. The stems are slightly bitter, the leaves sweet. Use leaves raw in salads, or cook Salad Savoy as you would kale.
