SAVOY


Savoy cabbage's crinkly, flexible green leaves grow in a loosely packedhead. More tender than green cabbage and milder in flavor, Savoy may beused intrchangeably with green and red cabbage. Salad Savoy's frillyleaves have the heavy texture of kale in variegated colors of white, green,and red. The stems are slightly bitter, the leaves sweet. Use leaves rawin salads, or cook Salad Savoy as you would kale.
