Kale is a curly-leaf member of the cabbage family. Like collard greens,
it is available year-round but is at its flavor best when exposed to cold
weather. It has the traditional cabbage flavor and aroma when cooked.
Choose kale that has crisp, colorful leaves. The color may be dark green
or slightly blue. Avoid wilted, limp, yellowish-colored leaves. Ornamental
kale, offered by florists during the cooler months, has a pink, purple,
or white heart and is used for decorations, but it is generally too costly
to use as a vegetable.
