MUSTARD GREENS

Mustard greens look like a more delicate version of kale and are a lightergreen in color. These greens are a big item in the South, but don't selltoo well in the rest of the country. Though they have started to show upin a lot of mixed greens mixes.

Shop for mustard greens as you would for kale. The leaves may be dark orlight green in color or even have a trace of bronze. Avoid those that arelimp and yellow.
