The green tops of white turnips are marketed as turnip greens or turnip
tops. Like collards, they are primarily grown in the South, where they are
a staple in the diets of people in lower income groups.
Occasionally the turnip greens are sold in bunches, with the small white
turnips attached. However, they are usually marketed without the turnips.
When shopping for turnip greens, select those that have fresh green leaves
and avoid those that are limp or yellow. Check the leaves for insect damage.
If there are a lot of small holes, the bugs have already had a party.
The green tops of the yellow turnip are called Hanover greens. They
are slightly less desirable than the greens produced by the white turnip.
Where there is demand for this product, turnip greens are available year-round.
Prepare them as you would spinach.
