The calabazo is a large, hard-shelled gourd that looks like a cross between
a pumpkin and a Hubbard squash. It has a smooth skin and a thick, orange-colored
flesh. It may be baked or boiled in the same manner as winter squash. The
calabazos are usually too large for an average family to handle and are
cut into sections by the retail markets. Uncut calabazos do not require
refrigeration unless
temperatures exceed 75F.
