The nopales are the large round leaves of a variety of cactus. They are
the size and the shape of a dinner plate, a light green in color, and about
three quarters of an inch thick. When harvested they are covered with sharp
barbs, most of which are removed prior to shipment to market. But handle
them gingerly, because the barbs are usually not completely removed. Nopales
should be refrigerated after purchase.
Nopales take little time to prepare. The leaves are cut into strips and
then have to be peeled. The strips are then sliced as you would French a
string bean. They may be boiled or fried. Use them as you would green beans,
which they taste like but are crisper in texture.
