Though actually a fruit, Plantains are treated more like a vegetable.
Plantains look like over grown green bananas. They are an important food
staple in most tropical nations. Unlike their cousins the bananas, plantains
are too starchy to eat raw. They are prepared like potatoes-either boiled,
mashed, baked, or fried. When cut into wafer-thin slices and then fried,
plantains are more flavorful and nutritious than potato chips. Plantains
need refrigeration only if temperatures exceed 75F.
