BEIGNETS CHOKE CRAB


Artichoke and Crab Beignets

Yield: 1 recipngs

1 bn Green onion white parts;
-chop
1/4 c Pimientos; chop
4 oz Artichoke hearts; chop
2 lg Cloves garlic; chop fine
1 tb Parsley; chop
1/4 ts Cayenne
1/4 ts Salt
1 pt Flour
1 pt Water
2 ts Baking powder
16 oz Jumbo lump crabmeat

Mix flour and baking powder. Add artichokes, green
onons, garlic, parsley and pimientos. Add salt and
pepper. Add water and mix until batter is well
blended. Fold in crabmeat. Fry in peanut oil at 350~
until golden brown. Use tablespoon to drop batter into
