OYSTERS ROCKEFELLER


Subj: Oysters Rockefeller


24 large oysters on the half shell
3 green onions
1/4 cup chopped celery
1 tsp minced tarragon
3 sprigs parsley
1/2 cup spinach
1 cup butter
1/3 cup soft bread crumbs
Salt Pepper and few drops of Tabasco plus Lea and Perrins
Few drops of Absinthe or Pernord

Chop greens fine - add crumbs and seasoning
Pound down and cream with the butter
Arrange oysters in a large pan and put 1 tbs butter mixture
on each oyster
Bake at 450 degs until brown
This usually serves 6
