2 cups uncooked rice
2 tablespoons oil
1 small onion, shredded
1 small carrot, shredded
1 teaspoon salt
4 cups chicken broth
In large skillet, sauté onion, celery, and carrot in 1 tablespoon
butter or oil until onions look translucent. Remove and set aside. In
same skillet, heat rest of oil. Add uncooked rice and heat thoroughly.
Pour in 4 cups broth and salt; bring to a boil, stir, cover, and simmer
on lower flame for 20 minutes without opening lid. When rice is cooked,
mix in sautéed vegetables; stir with fork to blend. Makes an excellent
side dish with lamb or chicken.
