SPANISH RICE


2 tablespoons margarine
1 cup rice
1/4 cup minced onion
1/4 cup chopped celery
1/4 cup chopped green pepper
1 teaspoon salt
2 cups tomato juice
optional: add 1 tablespoon ground cumin per cup of rice
Crock Pot Directions: In hot frying pan, melt margarine. Add rice and sauté until golden brown. Add onion and cook until soft. Transfer to crock pot. Combine remaining ingredients and add to rice. Stir well. Cover and cook on low setting 4 to 6 hours.
