TABBOULEH




2 cups bulgar wheat
2 Tblsp. olive oil
water to cover bulgar, about one, one and a half cups ( it will soak in)
1 sweet white onion, finely chopped
one and a half cups chopped roma tomatoes
one fourth cup finely chopped fresh parsley
one fourth cup finely chopped fresh mint
1 European cucumber, finely chopped
the juice of 4 lemons
freshly ground black pepper and sea salt to taste
1 Tsp. ground cumin ( optional)

Mix all ingredients in a bowl. refridgerate for one hour, add more wateras needed.
