TAPENADE


Tapenade
1 cup pitted nicoise olives
2 TB chopped rinsed capers
1 TB minced garlic
2 tsp chopped anchovies
1\2 tsp ground pepper
2 TB Armagnac(optional)
4-6 TB extra virgin olive oil

Place all ingredients in the food processor and puree.

I sometimes use a mix of canned black olives and calamata olives for a less salty flavor. Occasionally I also mix in a little fresh basil or oregano.
