Biscotti
Ingredients
1/2 C. coarsely chopped
almonds
3/4 C. sugar
2 t. anise extract
2 t. orange zest
1 1/2 t. baking powder
1/3 C. butter or margarine
2 eggs
2 1/4 C. flour
1/4 t. salt
Instructions
Cream butter or margarine and sugar together until light and fluffy. Beat
in eggs, anise flavor and orange zest. Combine flour, baking powder and
salt in a bowl. Add to butter/sugar mixture. Add almonds. Grease baking
sheet. Form dough into two logs about 2" x 12" and place on sheet.
Bake at 350o for about 25 minutes or until golden brown. Let cool 5 minutes
before slicing (use bread knife) about 1/2" thick. Lay slices back
on baking sheet and bake for another 10 minutes per cut side. Yields approx.
3 1/2 dozen.
