DOUBLE CHOCOLATE CHUNK BISCOTTI
1/3 CUP BUTTER
2/3 CUP SUGAR
1/4 CUP COCOA POWDER
2 TSP. BAKING POWDER
2 EGGS
1 3/4 CUPS FLOUR
4 OX. WHITE BAKING BAR, COARSELY CHOPPED
3 OZ. SEMI-SWEET CHOCOLATE CHIPS
Beat butter til softened; add sugar, cocoa, baking powder and beat til combined;
beat in eggs; beat in as much of flour as possible with mixer; by hand,
beat in remaining flour and both chocolates; divide mixture in half; shape
each into 9" long logs; place both on greased cookie sheet; flatten
both to about 2" wide; allow space for logs to spread as they cook;
Bake @ 375 for 20-30 minutes; cool 1 hour on wire rack; cut diagonally into
1/2" slices; lay slices flat on ungreased cookie sheet; bake again
@ 275 for about 1 hour, or until really dry and crisp, turning several times
during second baking; cool, then freeze.
